Fan relay or thermo switch. Those fans draw huge amperage starting up so they heed to ge activatd by an electrical relay, most likely in fuse box

Also could be temp sending unit on your radiator. closes the circuit when coolant temp gets too high turning on your fan. also check fuses and fusible links in that circuit
