that's a common problem with chevy S-10s as they often come with 4 cylinder engines, your best bet is to replace the engine with a V8. It is a fairly common mod and there are kits you can buy to make it easier.
Why is my oil pressure dropping?
first suggestion is to check the oil level in the sump as this indicates that on start up there is sufficient oil but when the oil galleys are full the pump is sucking air and the pressure drops to zero. The level has to be on the top most fill mark.

2003 Chevy S10 Head Gasket
First off your engine should not get "stuck" or seized yes it is bad for your engine too be run until the problem is fixed because the coolant that is in your oil isn't meant too lubricate. Starting the truck isn't really helping anything it is probably better to let the fluids sit in the bottom of the oil pan. As far as the new engine, depending on how much you drive it it could be a couple of weeks to a couple of months. You could drain the engine of oil and coolant and then only refill the oil for storage purposes but the cooling system may dry out and seals could crack and leak. The reason that you are having this problem is the leaky rad and the cooling fan problem, the heat caused your head gasket to fail. You should just park it and leave until you get it fixed although you could start it about every six months if you plan on leaving it that long.
Hood latch problems
