A worn water pump is the most likely. If the coolant is going down, the water is going somewhere.
The most common reasons an Oldsmobile Alero is overheating are a coolant leak (water pump, radiator, hose etc.), the radiator fan, or a failed thermostat. Coolant leak (water pump, radiator, hose etc.)
Is the thermostat opening at 195 degrees ? Does the radiator fan come on at 220 degrees ? The gurgling noise is usually air or coolant moving around in the system. If the engine is very hot this noise can be normal.

I hate to say it, but it definitely sounds like you have a blown head gasket. Overheating and white colored, "sweet" smelling smoke are both telltale signs of this. If it started overheating first and the white smoke came after, then you will need to have your cooling system inspected after the head gasket is replaced.
White oil means water or coolant is leaking in via Head Gasket Failure or a crack in the head.
Along with repair - be sure to have each cylinder compression tested to see if there is a crack that has developed.
