I want to put a kill switch in my 04 Dodge Dakota. Is there a diagram available that may help with in-board wire selection? Possibly fuel or other cut off would be fine.

I strongly suggest you buy either a Haynes or Chilton service manual for your model and year.
Either of these will have circuit diagrams in them which include wiring color codes and you will save the $20-$30 cost of the manual over a couple of years.
Also handy to leave in your Dakota in case you are traveling and Podunk, IA doesn't have a manual when you break down and it gives you a chance to do a layman's check on the complexity of a repair for which the dealer wants hundreds of dollars of labor charges.
You can find the manuals on line or in any auto parts store.
