When I start my vw golf, within a minute, the Red temperature light on dashboard comes and stays blinking. On next restart, it disappears. The maximum Temp is 90 degrees, which the car slowly climbs to- never above. I have observed that every morning the water / coolant level has dropped and i have to re-top to be on the save side. I never find a big pool of coolant, a local mechanic has sworn that there is no coolant leak- and taking my money for nothing. What am i missing?

The thermostat will show what the guage shows. the seal on the coolent bottle can be checked for tightness. so it could be a faulty sensor?

fan relay is under the frame on the left by the fans. but most likely the fans themselves have gone bad check the fuse panel on top of the battery see if it is burned or blown fuse this is caused by the fans going from stop to high speed to many times. you will flat 40 or 50 amp flat blade fuse and both fans sorry for bad news

Hi it sounds like you have a temp sender playing up I think there are 3 on your engine,

Is the heater nice and hot when the needle shows low temp? If the cooling fans turn on and the heater is hot, that leads me to believe the coolant temperature sensor is bad. You should try replacing that sensor. They are only $6 usd here. As long as your check engine light is not on and your fans are running, this will not hurt your car... but this is something you should fix soon if you can. Make sure the engine is cold when you replace the sensor

I think i would be inclined to look at the coil pack ,and the wiring for this where it comes from the ECU ,i have never come across this before but its possible if the ECU isnt passing the correct information to the coil pack to fire in the right order ,what about the crank position sensor wiring are they shorting somewhere ?' Have a good look at the wiring and if necessary take the black outer sheafing off to inspect the wires inside
