86 ford escort runs great, starts great, but idles rough and dies when you push the clutch to stop(most of the time but not all the time). It always starts right back up. It is not fuel injection and we have tried adjusting idle, spraying carb, etc.

Your IAC may be defective, first check the canister purge valve by removing the large hose off the charcoal canster and plugging the hose with a bolt or something you can fit into it, then try it also check PCV valve and see if it's bad. there are more things to check like fuel filter fuel pump and or fuel strainer if fuel tank but would need to have more information to help.

Vacume leak or bad idle motor. With the car in park and running with the hood open listen for leaks moving your hand around the different hoses looking for a change in the sounds that you hear. The idel motor also makes the car idel up to 1500 RPM or so right at start-up then idel down, If it doesn;t the idel motor is likly. Check engine light is on when running? Test for codes, Follow code test charts don't skip any steps!.

SOURCE: Why does my 2001 Ford Escort run rough and often
There are two likely possibilities. One is a leaking vacuum line. Inspect the vacuum hoses closely. Listen for any tell-tale hissing sound. Oftentimes the culprit is the hose going from the PCV valve to the intake manifold. It is susceptible to cracking. While you're at it, check the condition of the PCV valve.
The other possibility is a faulty Idle Air Control (IDAC) valve. If the IDAC is not opening sufficiently, the engine will idle rough or die at idle. Try removing the IDAC entirely, so the air intake is open. If the engine idles ok with the IDAC removed, replace it with a new IDAC.
If neither one of these possibilities checks out, you will need further trouble-shooting.
