Lack of gas or lack of spark. There are a million ways those things can happen while a car is running.

Try checking fuel pressure again with a guage on the fuel rail. If you still notice the pressure is low and you know the fuel pump is good, the fuel pressure regulator may be bad. Sometimes you can tell by unplugging the vacuum hose from it and if you see gas that means the diaphram is leaking. If everything checks out with the fuel system a bad EGR valve or EGR valve solenoid can cause cars to sort of stall under half throttle. Good luck and keep me posted. My 95' Caprice Wagon had the same problem with the fans. If you're any good at wiring you can try to wire in a manual switch for the fans. I think its cheaper than buying a new temperature sensor. As far as it stalling it could be any number of things such as flooding or its not getting enough gas or something. My weed-eater does the same thing to me. You may want to have a local shop check that out.

You have a thermostat stuck shut. This causes pressure build up causing the over flow. As the heat increases the pressure increases. Also the water pump cant circulate the water also helping to add the pressure.

It may be the speed sensor in the transmission,I do not think it has a speedometer cable,but check the sensor first,then if you need a speedometer,,the dealer,or the junkyard.
