2000 GMC Z71 5.3 Liter starts up but stalls out have changed plugs air filter fuel pump and drained gas and put in fresh gas but it still wont stay running and sometimes wont even turn over

Check the fuel pressure while its running. It sounds like the fuel filter is stopping up. Fuel filter should be changed every 50 thousand miles or so. If the filter is bad it won't be long until the fuel pump has to be replaced (located inside the fuel tank)! It's a lot easier to replace the filter before the pump is damaged!
Could be a small amount of rust got into fuel filter from sitting empty, try changing fuel filter before worrying about the fuel pump.Filters could be partly plugged and its always smart to start with the cheaper fixes first.
sounds like you are running lean , i would start by changing the fuel filter and check for fuel pressure using a fuel pressure guage at the shrader vavle on your fuel rail, if your fuel pressure is not above 35psi when you cycle your key on and you have changed the fuel filter i would recommend changing the fuel pump,
u can do the check the other way around/ disconnect the fuel line that supply the injectors/ put the pipe in a small plastic container to see if fuel is being supplied by the pump and avoid fuel spill in ur engine/ crank the engine for at least 5 seconds see if the fuel squirts with pressure/ if it does then ur fuel pump is ok / blockage is somewhere down the fuel line/ u can check fuel lines by blowing it with air but u gonna need the help of an air compressor.....
