Unless there is a ESP button (some cars have this feature, yours does not) no u can't turn it off. Have the system scanned by the dealer for trouble codes to help isolate the problem

You could always beat the sensor with a wrench and break it, but then you will get annoyed with the light in your dash... Either way, unless you get it fixed, the light in the dash will stay on, and besides, I can't see why you wouldnt want it, its a very good thing to have when travelling on slippery roads.

It could be a couple of things. If you have an older battery, low voltage can cause this issue or if the battery is ok you might need to recalibrate the steering angle settings:
Start the car
Now turn the steering wheel all the way to the left... Wait a second.
Now turn the steering wheel all the way to the right...wait a second.
Now center the wheel... Light goes out and your steering angle sensor is now re-calibrated.

I'm convinced that your brake pedal switch is faulty because the glow plug warning sign went ON after ESP warning light. Just replace the brake pedal switch, see if rear stop lamps light when press the brake pedal, and test the car on the road. Good Luck!

MB has ASR, VW now has ESP. You posted in Jetta TDI, but say you have a SL600. Both are slip/traction control programs and both can be manually overridden by dashboard button. When the ASR or ESP is locked out, the light will be on all the time, maybe you can just push the button? When driving, if this light flashes on, then ASR/ESP is trying to help get the wheel that is spinning not to.
If the light came on after replacing parts, or a repair job, something may be wrong with the parts (non OEM), the service or a sensor may have been damaged.
Check with dealer for a recall for your vehicle on brake switch ... vw had a recall on these around 2002-2005.
