It idles fine but stumbles when accelerating off idle only when cold. Accelerating when warm is no issue, and it has lots of power when passing/going uphill. It has the 3 speed transmission. It stumbles when driving at a steady speed, more pronounced when at lower RPM though (60-70 kmh when the transmission shifts into high but the RPM is low).

Sounds like your trans is stuck in limp in mode. Could be something simple as a sensor, or something major as the trans or the computer. Will need to be computer diagnosed.

It is in limp-in mode. You need to have it scanned for trans codes. It likely has a bad speed sensor.

Remember, when you turn your engine off, all the fluid returns to the pan. Hence the high level when you do check it cold. That said, your level should be higher when hot.
Suggest you use hot reading while engine is running to get most accurate reading.
Sounds like fluid level is low by what you are saying. If low, then tranny will "wait" until it builds up enough fluid to change gears. Don't drive in low fluid conditions!

check the motor motor mounts for movement,
watch how far engine rocks forward or back with it running and foot on brake
