Engine dies when moving shift selector from park 2000 mustang

The transmission range switch detects the selector lever position when the shift lever is in the N or P shift position and sends a signal to the Transmission Control Module (TCM).

Brake switch, shift interlock solenoid or bad transmission range selector. Shift interlock won't let you shift out of park unless your foot is on the brake. So brake pedal starts the cycle. Next, the vehicle has to be in either park or neutral. So power flows from the brake switch through the transmission range selector which then sends power to the shift interlock solenoid which moves a pin out of the way, allowing you to shift out of park.

Make sure your brake lights are working, the shift interlock may not be getting signal from the brake light switch to release the shift lever. If they are working, the problem may be the shift interlock switch.

Automatic or stick ?
If its an automatic, it could be something in the torque converter or transmission. The torque converter clutch could be stuck.

sounds like an automatic? the position selector/which is a plastic sort of triangle that has wires running to it/ location on East/West engine should be at front of Automatic? (Common Problem)

sounds like a motor ground might be bad

if the nuetral safety was a problem the car would not start at all, sounds like you have a defective engine wiring harness, this is the most common cause of this i have seen while working for Ford.

sounds like your brake/shift interlock solenoid is not releasing.
Your owner manual will tell you how to bypass in emergency.
Check your fuse first. fuse panel on instrument panel.

The selector lever lock can be moved mechanically out of position ”P" when for example the battery is disconnected or completely discharged.
Using a ball point pen or similar item as an unlocking lever, push forward and hold in position.

Move the selector lever out of position "P".

NOTE: If the selector lever is moved back to ”P" it is re-locked.
