Add an aftermarket temp gauge to your truck (many vehicles have "dumb" gauges that only move or warn when there is a critical problem). Even with the normal cooling components working (for the engine) you can have overheating with a bad gasket etc - if this is a concern a leakdown test is in order. It should never get that hot unless you're in AZ and it's 110deg outside. Makes sense the AC would be disabled if the engine is running hot as AC produces a lot of heat in front of your radiator (can also be behind depending on vehicle). Shutting it down allows more cooling - I had to drive my aftermarket turbo miata with the A/C switched off for a while last summer - if it was on I could watch the gauges (oil and water temps) climb.
