I was driving my Mercedes-Benz C55 AMG down the road at 35 mph, all of a sudden the transmission line blew off the cooler. The proceeded overheat what went wrong?

Probably a damaged coupling or badly worn pipe.
If not too late, replace the lines and refill the transmission with Mercedes Transmission Oil.

Changed xterra manual automatic transmission , now it's overheating

What's overheating? the engine or the transmission? If the transmission is getting hot, then most likely the cooler lines weren't cleaned. If it is the engine. It's just coincidence. Start with the thermostat.

WHEN IM DRIVING, IT POPS OR JERKS ALL OF A SUDDEN AND THEN WONT SHIFT GEARS. WHEN IM ON THE EXPRESSWAY AND IT DOES THIS, IT WILL BARELY GO 55 MPH.

Your transmission fluid is dangerously low (tranny is dry). The pops & jerks are the transmission
internal components trying not to seize onto each other due to lack of lubrication and/or overheating.
Low transmission fluid leads not only to loss of lubrication but lots of overheating (of the tranny).
The loss of Elantra performance (speed tops out at 55), is caused by power loss due to friction inside the transmission. All your power is lost overheating the transmission (toward destruction), instead of
being transmitted through the transmission to the wheels.

The 2004 Elantra takes Hyundai SP-III Automatic Transmission Fluid, with 8.4 quarts used in a
total refill - but just 5 quarts at a fluid change. For How-to transmission fluid change instructions:

I would begin by checking the transmission fluid level. If it's ok, then that means that your transmission has overheated. Have it checked for overheating damage by a professional transmission shop. If everything checks out ok have them add a secondary transmission cooler. This will allow the transmission to cool down faster under heavy hauling conditions. Hope this helps, good luck!
