Follow the Upper coolant hose on the radiator to the engine block. it should have a couple bolts that hold it onto the engine. remove those bolts with the appropriate size wrench or socket wrench. remove the old thermostat and replace it with the new one the same way.

If you mean the engine thermo, follow the top hose from the radiator
to the intake manifold. Their will be a coulpling bolted in the manifold. Pull off and replace with factory thermo.

Follow the top radiator hose down to the water outlet. The thermostat is inside the water outlet,Just remove the bolts,replace thermostat,replace gasket,bolt back in place.

2003 Mitsubishi Montero Limited. 97k miles. Temp gauge is erratic when actual temp is normal. How do I fix this?

Not sure what you mean. They are help down with 4 screws each and have 2 wires each. But unlikely all 4 went bad. Sure it isn't the stereo that went bad?
