When it's getting low on those fluids you have to add more. Don't run it low on anything you'll ruin engine. Get it into a shop as soon as possible and have it checked out, to see where the coolent is going. You should be checking your fluid levels when you put gas in the car, especially on an older car. Engines tend to use more oil as the miles get higher on the vehicle. Oil and anti-freeze are cheap engines are not.

Temperature guage goes back and forth during normal operation

If it is in the center, once warmed up, then suddenly drops to cold then it needs a coolant temp sensor. They're very easy to replace, located in a black plstic coolant flange in the drivers side end of the cylinder head. It will either be black or green, with a connector with four wires coming out of it. It is secured by a whin black plastic clip.

If the temp does not go all the way down, it probably needs a thermostat.

2002 Jetta 1.8T blew 40A cooling fan fuse - overheated, destroyed 4 way cooling hose connector - replaced all- now it still runs very hot, inside temp reads 190 (but temp is much higher), cooling fans run...

Then replace the thermostat, because if on lower hose not hot and on upper hose scalding hot = antifreeze flow blocked by the thermostat wich remains closed!!!

Thermostat replacing:

I have a 2003 volkswagen jetta, no owners manual, outside temps have been really cold, below the temp gauge a temp light comes on and a chime sounds, temp gauge runs fine, had a friend ck coolant, it...

does it do this first thing when its cold out ?? if so, fill the coolant res to the max line when cold, if light still comes on, it could be either the coolant leven sensor (my guess) or the temp sensor for the engine- these are known to go bad every few years

Jetta 2003 TDI

My mechanic in our town did a quick computer check. Car computer indicated a low level of antifreeze, he topped it up, cleared all messages off the car computer and said to watch the the heat guage for any further irregularities. I'll keep an eye on it, love the car, great mileage fun to drive.
