Yes you can run a shorter belt. You will have to measure how many inches you need to get the right size belt. The routing should be pretty much the same you just skip the AC pump and route the belt as usual. The auto parts store may carry the belt of you ask for a no-ac option when making your purchase.
Well since your vehicle came equipped with factory air then running a short belt would be considered a custom application. It is a little hard to tell you the exact routing without being able to see the vehicle. It shouldn't be too hard however, if you follow the routing diagram under the hood and just bypass the routing for the ac compressor it should go on pretty much the same way. I understand about the compressor costing dollars I have a passat and everything on a VW is grossly overpriced. If you would like you can try these websites as they offer low cost alternatives to manufactures parts. Rockauto.com offers OEM replacement parts at a discounted price and car-part.com is a parts listing of all salvage yards in the US and most of them will ship a part to you. You may be able to pick up a compressor on the cheap from one of these sources.
