You need to reset it manually after you change the oil. If you have the owners manual it will explain how to do this. If you don't have it you get get a PDF version online at ford.com.

2006 Ford Explorer owners manual.

Essentially you need to scroll through the message center until system scan appears. enter it and a message will come up oil life press reset if new or oil life hold reset if new. Follow those instruction and the oil life will eventually change to 100%.

Why would the oil light stay on?

That depends on the type of oil warning light being displayed. There are 2 types of warning lights

1. Low oil pressure light which all cars have
2. low oil level light which some cars have.

Low OIL PRESSURE warning means the oil pressure is below minimum and when this happens there will be insufficient lubrication of many engine parts because sufficient oil cannot get to all parts of the engine it is required to lubricate. Until the cause is identified and rectified the warning light will remain. If you run your engine with low oil pressure you will cause expensive damage to internal engine components.

Low OIL LEVEL warning means the oil in the sump has dropped to a dangerously low level (which may be due to an oil leak or abnormal oil consumption by the engine.) This warning means the oil level needs to be topped up and the warning will stay displayed until you top up the oil. Running the engine with low oil will cause expensive engine damage.
Since it is a 2 minute job, Oil levels should be checked fortnightly as a minimum, together with radiator coolant and power steering fluid levels, if you run the car most days each week as most people do.

It is possible for a warning light to remain displayed when the cause has been dealt with because there is a problem with the sender unit. However it needs to be established with alternative checks that the problem has been fixed before investigating if there is a problem with the warning light itself.

How often should the oil be changed

Rule of thumb is every 3,000 miles for conventional oil longer if synthetic oil is used. Also some cars have a warning light that will indicate when the vehicle requires an oil change. Do not forget to check the oil often though if oil leaks exist.

At the first 7,500 miles the oil light did not go on.... is it supposed to?

The oil pressure light is supposed to come on when you switch the ignition on, and then go off within seconds of the engine starting. If however it is an oil level light, it is not supposed to come on until the oil level falls to the stage where it needs to warn you that it requires top up. always treat a warning message as serious and have it check at an accredited service center
could be that the oil needs replacing, a problem sensor or wiring or clutch/band adjustment

If the oil change warning was not reset at the previous oil change it's letting you know about the 5,000 required change, and it will continue to chime until reset. See your manual or dealer for reset instructions.

Oil Change Reset
A press of the OIL CHANGE RESET switch will allow you to
reset the oil life feature to 100% (or your Personalized Oil Reset
Percentage). After you have the oil changed, you must execute
the following procedure. Press the OIL CHANGE RESET switch
and hold for five seconds as the M/C counts down for five
seconds. After a successful reset the Message Center will display
“OIL LIFE RESET TO 100%.” If you have established a
Personalized Oil Reset Percentage, the display will show that
percentage instead of 100%. To ensure accurate oil life
indicators, perform this reset procedure only after an oil change.
Your Personalized Oil Reset Percentage allows you to establish a
smaller oil change interval than the manufacturer’s
recommended interval. To establish your Personalized Oil Reset
Percentage perform the following procedure:
1. Press and hold the OIL CHANGE RESET switch and press
the RESET switch while the display is still counting down
the 5 seconds to reset. The display will change to “START
OIL LIFE AT XXX%.”
2. Press the OIL CHANGE RESET switch until the displayed
percentage is the Personalized Oil Reset Percentage that you
desire. Your choices are 100%, 90%, 80%, 70%, 60%, 50%,
40% and 30%.

Oil change light coming on

The Patroit uses a combination of engine run time, mileage, and temp to determine when the oils needs to be changed. If you do a lot of idling you could require a change sooner than the 6000 mile interval. If you do get your oil cahnged or do it by yourself, here is the way to reset the oil warning from the owners manual:
