I think your clutch has worn out ,it needs a new clutch, the water noise is a air lock possibly so try topping the rad up some more and hopefully this will stop the noise but if engine isnt overheating then do not worry about it too much ,

Is the clutch the problem? My 1993 gmc pickup with the engine running I can shift to any gear without engaging the clutch ?it does not grind or try to move.

Sounds as if the clutch is no good or is engaged constantly. Possible clutch worn out or throwout bearing is seized on input shaft

My 95 gmc wont start when hot starts and runs cold

Im guessing it's a 4.3 L engine. Sounds like your coil is acting up when the truck heats up. Bad coil, or small wires going to the coil

Niose when clutch is engadged

That would be the clutch release bearing (also called the throwout bearing).
The bearing is a sealed unit that eventually wears out and needs replacing.
Unfortunately, the only fix is to pull the transmission and replace the bearing.
And while you're at it, you might as well put in a new clutch and pressure plate while it's apart. Or not, depending on your budget. The release bearing runs in the neighborhood of around $40. If you can stand the noise, the bearing may last for quite a while, but eventually it may sieze and leave you stranded.
Good luck.

I have an 1989 GMC Sierra K1500(4x4)5-speed. grinds when going...

It may be the transmission input shaft bushing or bearing, located in the rear of the engine crankshaft, in front of the clutch assembly. If the bushing or bearing is dry (needs to be greased), the input shaft will still try to turn with the engine rpm, even though the clutch pedal is depressed. Also, the clutch disc may not be fully releasing, which could possibly be corrected by adjusting the clutch pedal linkage. good luck

Stalling

Possibly faulty ignition module is the problem, stalls when engine is hot when you sit for a while it cools off and runs again until it heats up again, those are usually the symptoms of a bad ignition module and after a while it may give out all together and not run at all, usually if the module is at fault it shuts down the fuel pump so the engine don't load up with fuel, do to when engine continuously cranks over the injectors never stop squirting fuel and flood the engine do to lack of spark which is produced by the module, this could possibly be your problem.
