Why does it die occasionally at low rpms/idle?
Videos and text based troubleshooting. Plugs are a good start.https://www.google.com/search?q=Why+does+MY+2000+V+Star+1100+Classic+die+occasionally+at+low+rpms/idle%3F&hl=en&source=lnms&tbm=vid&sa=X&ved=2ahUKEwjA8PTHyJPuAhXOgtgFHdiFAHoQ_AUoAnoECAoQBA&biw=1366&bih=625
2000 Yamaha V Star 1100 Classic charging issues
It could be a connection issue. Check all charging connections for corrosion. If you have too much resistance in one or more connections you'll have a voltage drop across the connection. The voltage drop will make the regulator think the battery is undercharged and pump more current to it. Loose connections will also cause the problem.
Where can I find out the fuel economy for a model year 2000 Yamaha V Star 1100 Custom XVS AMC?
My experience shows about an average of 40mpg. Road, wind, temp conditions, carrying a passenger,. can vary that by 5mpg either way.
If you own the bike you're speaking about, fill it up reset the odometer, put 100-150 miles on it, fill it up again and do the math.
The vstar was an excellent fuel miser, if you plan on doing a lot of your own work, buying a service manual from somewhere like amazon.com for $20-30 bucks, you'll have a sweet dependable ride.
Miss when bike is warm to temp
why take the engine out ? compression test and pressure drop test to see if valves are leaking is what i would have done first !! carb and fuel system clean ??
Wireing diagram
Could be the regulator, but I would check a burning bulb socket before replacing the regulator. If they short out they tend to melt the socket and sporadically spike the voltage. I would do the wiring wiggle test while it's running to see if you can isolate the issue to a specific connector. I’m happy to assist further over the phone at

Front cylinder not firing on my 2000 yamaha v star classic 1100
Sounds like its the float in the front carb is sticking, causing it to flood the front cylinder with too much fuel. Need to clean carbs, reset float levels, and synch them. Running it like this will wash the oil out of the cylinder, causing it to lose compression.
Need to find how to check the oil level and what
The oil level is checked at a small site glass (about the size of a quarter I would say) on the side of the engine clutch cover down low near the bottom, really is a little hard to see. Before you check the oil level make sure to let the engine stand for at least 5 minutes so that oil trapped in the up end drains down. The proper oil level is about mid way up the site glass, do not overfill! Use any oil that is designed for motor cycles, use 10W-40W weight. Do not use oil formulated for cars, it has additives that can cause clutch problems. Any motorcycle dealer or accessory shop can supply the oil you need. You can also get the oil from a company called "DENNIS KIRK" they are on the web.
How to remove the seat of 1999 v star 1100
Hello
1)Engage the kickstand and ensure the Yamaha is securely standing.
Examine the front part of the seat, closest to the speedometer. You'll find a bolt.
2)Remove the front bolt with a 10-mm socket wrench. This unhooks the front part of the seat assembly.
Move to the rear part of the seat.
3)Examine the rear part of the seat to find the 5-mm Allen bolt. Remove it with the Allen wrench.
4)Grasp each side of the seat and simultaneously lift it upward and backward to remove it from the Yamaha 1100.
I hope it helps. Don't forget to rate.
Thanks

the carbs could be an issue but if they were redone then it seems as though it may have a timing problem
