2008 Street Triple that I just completed restoring from a mild wreck. Got an instrument console from the UK, everything was fine for first 4-5 rides. Then during a ride, instrument gauge went blank and rpm froze in position (it was still lit and showed lights alongside) but no information in data screen. Need to check and measure the generator's stator for correct current supply and install new regulator/rectifier and battery.

When there is no charging system operational, the bike will run wih battery in total loss mode. When it gets to a certain point of discharge, the first indication is indeed as you saw, the intruments go blank. There is little power left at this point and need to get home asap!
Either the R/R (rectifier/regulator) and/or the stator is bad - both are unfortunately quite common failures on these bikes.

Follow those guidelines and you will be able to determine which or both is failed.
Also is a recommendation for a retrofit/upgrade to a better component if you do need to replace the R/R.

Sounds like a wire or harness is getting pinched coming out of your key switch or ignition wire harness between the forks and the triple clamp.
Inspect all the wires and harness in those areas thoroughly and you will probably find some abrasion where the insulation has wore away and you are grounding between the stop wire and the frame every time you turn.
You can isolate and tape the wires with electrical tape then re-tape the harness. Some black or frame colored wire ties will hold the wires or harness out of the way precluding further occurrence or shorting.
