Try raising the front of the shift pedal one or two notches on the shift shaft. Chances are because of the current height of the shift lever your shoe lifts the lever too far thus going right past neutral.
As far as I know there are no manuals online other than 3rd party sites charging for the manual. You might try ebay. I've seen manuals there for a nominal fee. Otherwise, check with an authorized husqvarna viking dealer. They may have some on hand from trade-ins, etc. Otherwise the dealer can order you a manual if they are still available.
