I believe you seat hinges to the side . If you put your key in the helmet/ seat lock and turn it, you should be able to lift that side of the seat. To remove the seat after that just remove the clips on the pins , pull out the pins, and lift the seat off.

I have Suzuki gs 750 e, model 1979. The engine is an air-cooled, 4-cylinder,4-cycle model equipped withdual overhead camshafts. I am looking for new camshafts for the engine. Do gs 1000 and 1100...

The simple answer is no. It is possible to put a complete 1000 engine into the 750. but this will involve making brackets etc.
Proberbly the easiest way to more power is to fit the barrells and top end from the GS850. This will fit straight on. Ideally, you will need the 850's carb, but the 750s could be jetted to suit. The exhaust is the same fittings, so you could retain the gs750 exhaust as well. They also share the same airbox.

Front brake calipers clamping down on rotor

Sounds like they need a damn good clean.
Corrosion eats away at the calipers, so strip them down & clean well. Be sure to remove the rubber boots as corrosion behind them grips on the shaft causing the caliper to not float & the brakes lock-on
If your wheel wont turn at all then hit the caliper bodies with a rubber mallet - dont hit the bleed nipple!!
Good Luck
