You can't bypass a flammable vapour sensor. it works on resistance not continuity. You can try moving the sensor outside for a while and it may reset itself...meaning that the resistance may fall back within range. You are best to have the sensor replaced by a qualified technician who can also verify that you do not have an underlying issue such as a gas leak which is causing the sensor to trip.

The three most common reasons for this happening to you are 1) a defective gas valve, 2) a rusty thermopile, and/or 3) the automatic shut-off not working as it should. So, the most common reason for many people having this problem stems from having a gas valve that is not working as it should. When your gas control valve is faulty, it will mean that your burner is not going to be igniting as it should-or at all. Something that worked for me one time was to turn the Temp all the way down then all the way to Max a couple of times..gradually. Why it worked I don't know. Got a couple more years out of it though. the gas valve can be replaced, but you will have to pay for installation. this is not a DIY. You can throw money and parts at it. Personally I've replaced my water heater at the first sign of problems. Are they inexpensive no If you furnish model number I can look further.

if system is new call whomever installed it and it repaired under warranty. there are several reasons unit is not producing hot water. First thing I would check is temp setting. Again call for service under warranty.
