I had the same problem too. There should be maybe 1/4" of loose vertical play of the dough hook (or similar attachment) on the agitator shaft. The hook locks in place rotationally on the shaft until it is pushed up. Before you try to turn the dough hook backwards in an attempt to remove it, push it upwards and hold it up, then rotate.

The bowl holds 20 quarts--are you overloading the mix? This mixer is not made for medium/heavy pizza dough.Depending on the pounds of dough, water and other ingredients will affect the mixer in some way.

I believe the speed control needs to be replaced. It controls how much electricity is sent to the motor.

Yes, the Transmission Gearing should be packed with grease which is available from Hobart as detailed in the Manual at the following link, although I suspect any high quality food grade transmission grease would do the job.

I'm not sure if you'll be able to see the manual from the link but if you have any problems then just ask for further assistance.

My fantastic guy just rebuilt my A200. He says it's likely that your back plate is slightly off center so that the center arbor is touching the windings-- any contact and the machine won't run. The tolerances are thousandths of an inch in there.

Punch and hammer. It's best to remove the planetary so you can support the shaft while driving it out. If not it puts a lot of unnecessary stress on the bearings and other parts.
