Ice cream will get hard when the temperature is closer to - 20 C or -1 F scale. Water becomes Ice at 0 C or 32 F scale.
Ice cream soft means your freezer is not cooling enough.
You were cleaning the coils? Both condenser and evaporator coils? Cleaning coils and then loosing cooling in the fridge is not a good sign or combination. May be there is a freon leak and the seal system is low on freon now.
Call a service tech to check the seal system.
Unfortunately, if it is a leak you may eventually buy a new fridge after spending money on freon fill up, freon system sealant, leak check etc etc... No good news. Sorry

is a multi-solution answer since I don't have all the tech from your question to pinpoint your problem
But the solution is in here generically, if you read and study the solutions very,very carefully.
Check Temp inside freezer. It has to be down to about 10 or 15 degrees
This can cause slow ice making if its too high even tho its freezing everything else at 25 degrees
See if water is in icemaker.
Pour water in Ice Maker and wait to see if it ejects.
If it ejects thenyou need to replace water valve in rear bottom of fridge(Its the part that
attaches to water line out of wall)
If it doesn't eject then it is a faulty Ice Maker.
If its leaking or no water at icemaker or door either one, then the valve at the rear bottom of ref needs replacing
First I would check the fan in the freezer. Listen to see if it is running
It moves air to the ref from the freezer
Then check to see if freezer control is turned WARMER, which makes the Ref. colder
Also if it is getting drinking water to the door but not to the icemaker (or vice versa) Then you need to replace
the water valve at the bottom rear of the fridge. It is a double valve and one side is not working
Also this might be a common Defrost problem, Ice
is not being melted by the defrost system.The fan can't blow through the coils into the fridge.
Take out back panel of freezer to check for ice buildup. The coils should be clean.
There are three components to a defrost system- a heater,heater thermostat, and a timer unless you have a defrost electronic card.
Its best handled by a Technician but you could possibly do it by taking your model number to the nearest appliance parts store and asking for the parts. They are mostly located in freezer ,behind back panel on freezer coils.except the card which is usually located in ref The parts store will have info
Also check fan undernearh Ref in the rear

This is a very common issue, If the freezer compartment is cold and making ice the
problem is simply airflow from the freezer into the refrigerated section.
Typically when one senses the refrigerator is warm they max out the settings
on both dials the thermostat with its 1-10 settings as well as off for the compressor.
This controls the compressor and temperature.
The additional setting or dial is for colder freezer or refrigerator as well , However
it simply opens or closes a flapper door between the freezer and refrigerator boxes.
When that dial or setting is maxed , it closes and makes the freezer colder, yet leaves the refrigerated section starved for sufficient airflow to maintain a cold box in the refrigerated section.
Just set the dial that does not turn the compressor off to the middle setting.
One can leave the thermostat that does control the compressor in the max setting , just not the colder freezer setting, If you notice colder isnt colder refrigerator, Its actually colder freezer, A common issue found on 25% of all refrigerator calls a simple setting adjustment.
Its easy to think that maxing out the settings makes for a colder refrigerator, it doesnt, it makes a colder freezer and warm rerigeration section.
If a freezer is making ice, theres nothing wrong with the unit other than airflow setting.
I would also clesan the condenser coils off.

If your fridge seems to be running a lot more than normal, it is likely because the heat dissipation coils are clogged with dust. Most likely they are located on the bottom of fridge.
There should be a removable kick plate under the door. Often just snaps in.
Remove kick plate and use a vacuum hose to vac out the dust bunnies.
At your local hardware store you should be able to buy cheaply a long skinny brush to reach between coils and clean out.
You should pull the whole fridge out and get it from back also.
This will increase the efficiency on your fridge.
If you notice no change at all, or if you've done this already, it's possible the fridge has a problem.
Why internal lights not working yet panel lights do?
