Regarding replacing the temperature control

As soon as you open the freezer door the temp control is at the upper right of the freezer.

We have a true single door freezer, it is iced up

On the freezers a setting of 7 or 8 should do fine. I would be more concerned with the defrost timer, defrost heater, and settings. Also a HUGE problem is that the door switch on the top center of the door can sometimes barely contact the door (this happens when a unit is slightly warped or out of level) or the spring loaded hinge on the door can break causing the door to stay propped open at times. When the door doesn't close the evaporator fan stops but the compressor will continue to run. I have had to tape a nickel on top of the door to make better contact with the switch. Make sure the switch isn't the problem before going any further.

The little pin on the door hinge came out and door will not close on its own, How do I put the pin back in?

Hold door steady and work the pin back into place . Be gentle as you do this. It will work its way in. Keep moving door until it catches.

Keeps freezing up and will not hold the lower

Hi there,
It looks like you have a problem with the thermostat of your refrigerator, to get that fixed you will have to replace it. So that it will be able to hold low or high temperatures again.
You may want to try to give this guys a call so they can get the replacement part and have it installed for you as well.

Fan on t-23f not working,

Common issue on these is the the coil temp sensor mounted to the coils on top of the unit. The sensor is butted right up against the coil, and the defrost term switch is on the underside of the top of the case. Check these for continuity, but most likely the coil temp sensor. If these check OK then your fan motor may be bad. On some models from True there is a door switch that also has to be made so check that as well. Parts and diagram on the commercial freeezers are not readily available to the public and would be hard to come by without talking to a lisenced repair tech or True themselves. Sometimes you can disconnect the sensor and touch it directly to the coils and this may or may not work, depending on the condition of the sensor. Check for voltage going to the fan if none there then check the sensor. Here is a manual on this machine.

Compressor runs bypassed thermostat with wire that

If you have just turned it on it takes awhile for the fans to come on. The evaporator coil has to get cold about (10 to 20 degrees) and make a klixion fan switch to turn the fans ON.... Is the evaporator coils getting a frost pattern on them??? If not then the system may be low of Freon.. If the coil is completely froze up and you are getting frost back to the compressor..... then you have a bad fan switch or a door switch.... If you have a wiring diagram you can trace out the wiring.... It is usually down by the compressor or control panel... hope this helps.
