WHEN FRYER HEATS UP THEN IS LOADED TEMP SEEMS TO FALL AND HAS TO BE RESET

If you manually reset by pressing overtemp thermostat, then check your operating thermostat.. maybe over heating.. if so replace thermostat.. if pilot cuts out completely prematurely without reaching set temp then replace overtemp cut out thermostat as it is faulty.Cheers

Unit over heats burners stay on after turning off

Either thermostat is faulty or combination gas valve is not shutting off. more than likely it will be a problem with the gas valve which is the big aluminium block located toward the floor of the fryer. the " actuator " on the valve is faulty. replace the valveCheers

Hi Dan.Check if the fire tubes are clean, exhust system must be operating well during fryer operation. There should be no fresh air directed at the flue stack of the fryer, only exhaust.Regards.

Pitco deep fryer flames coming out the fryer

Hi there.
The soot or carbon have probably build up inside the fire tubes, better check and have an authorized service technician clean them.
Make sure that the fryer is receiving the rated gas pressure and correct gas type as stated on the nameplate, this way, carbon or soot formation on fire tubes can be prevented

Pilot light lites but nothing else happens it goes

The first thing that comes to my mind is the safety shut off heat sensor. Near the pilot light should be a small "rod", either metal or ceramic, which will have a solid metal "wire" running to the valve. If this sensor gets fouled, or somehow got knocked out of the path of the pilot flame, it will not draw enough heat to activate the safety shut off. Try cleaning the sensor--any anti-corrosive, such as plain old white vinager--and make sure the pilot flame is making strong contact with the sensor. I've ran into this problem on a number of hot water heaters, as well as a Frialator I had at a restaurant I worked in. Hope this helps.

Hi there
Hi limit will trip at 450F.
Check your thermostat setting, then check its calibration, this way you will be able to verify where the problem is.
If the setting and calibration of the thermostat is good, check the hi limit sensing bulb, it should not touch the fire tube because if it does, it will sense high temperature and will cause premature tripping.

Fryer smokes at 350 with new shorting and we fryed

Hi there.
You may need to check the calibration of your fryer in to verify if the thermostat regulates the oil temperature as set on its dial. As for the thermostat body, it should be mounted properly to avoid movement that which could break the capillary.

Hi there.
Thermopile must be free of soot or any form of dirt so that it coud absorb the right intensity of heat from the pilot flame for millivolt generation used in energizing the pilot and main valve electrical coils for pilot and burner operation. Pilot flame must be stable during fryer operation as well as the gas pressure being supplied to the unit.
All wiring connection must be tight, a very small amount of voltage generated by the thermopile or millivolts will not pass thru loosely connected wires.

Hi there.
Make sure that the gas supply has the same rating and type as written on the nameplate.
Check also the gap of the spark ignitor to the pilot. Spark ignitor also acts as flame sensor for pilot flame proving, it if could not properly sense/ detect pilot flame (in case pilot flame weakens during operation due to low gas supply), it will shut the burners.

Gas valve and thermostat are two different parts. If you are having problem with the oil temperature, your thermostat probably is not doing its function well, that is, to regulate the oil temperature set on its dial, and needed to be replaced.

What are most common problems found with pitco

Some of the most common problems with Pitco fryers is failed Hi-Limit thermostats, carbon build up on burner tubes, and dirty or clogged burners. This hi-limit thermostat is mounted inside the fry tank on one of the burners. Often the cappillary tubes are damaged or broken during cleaning causing the limit to fail. The hi-limit is the most common part I replace on Pitco fryers. The other common items are self explanitory. Keep the fryer clean in all areas, including burners and tubes. You will see the repair man less often.

Hi there.

Computer Board is telling you that the drain valve is open so better close the drain valve. If it is already closed, check the alignment of the proximity switch, the actuator and the magnet must be properly aligned to give signal to the computer board that the drain is close.
