Pilot light does not stay
Hi there.
Try cleaning the thermopile, it must be free of soot or any form of dirt. Ensure that the gas pressure is sufficient, all wiring connections are tight and the hi limit is good.
If all of these are okay and the pilot still wont stay lit, try replacing the thermopile.

Soot coming out of flu
Hi there.
Soot coming out of the flue indicates poor flame quality and probably carbon or soot build up on fire tubes.
Have a technician check the gas pressure and the fire tubes for verification and cleaning if needed.

How do I jump/bypass the high limit switch?
Hi there.
Hi limits can be bypassed by connecting jumper wire from common to normally close terminals but this should only be done for testing purposes, if proven defective you have to replace it with a good one before using the unit in cooking.
Hi limit is the safety device of fryers responsible for shutting the gas valve in case oil temp reaches 450f to avoid oil from catching fire.

Visit http://www.middleby.com and go to PITCO web, you will be able to locate there the nearest authorized parts dealer on your area and ask for the conversion kit (from nat to lp). The gas valve conversion kit consists of spring, cap and instruction manual. you also need to replace the burner and pilot orifice, Nat pilot and burner orifice have larger bore than lp.
The burners will not light. The pilot does light.
The high limit switch has nothing to do with the pilot light, but will shut down the main burners. It the pilot light will not stay lit, then it is most likely the thermocouple. If the pilot light will not light at all, then gas is not reaching the pilot. Most likely, the pilot light tube is clogged with grease. When you push on the button to light the pilot, you are overriding all safeties inside the unit and sending gas to the pilot. Also make sure that the unit itself is getting gas. New regulations require a shut off within the hose that feeds the appliance which will shut off due to a surge of gas through the hose. To reset it, disconnect/reconnect the hose at the intake end and when you turn the gas back on, turn it on slowly.
