Soot coming out of flu
Hi there.
Soot coming out of the flue indicates poor flame quality and probably carbon or soot build up on fire tubes.
Have a technician check the gas pressure and the fire tubes for verification and cleaning if needed.

How do I jump/bypass the high limit switch?
Hi there.
Hi limits can be bypassed by connecting jumper wire from common to normally close terminals but this should only be done for testing purposes, if proven defective you have to replace it with a good one before using the unit in cooking.
Hi limit is the safety device of fryers responsible for shutting the gas valve in case oil temp reaches 450f to avoid oil from catching fire.

Burner problem

I light the pilot everything
Sometimes certain models turn off if you touch the thermostat before it lites...We've seen this happen many times, so you would need to light the fryer first, wait until it's stable before turning your thermostat to desired temperature.
Pilot lights but will not light burners when range
Hi there.
Check and clean the thermopile, it must be free of soot or any form of dirt so that it can properly sense heat from the pilot flame and generate millivolt to open main valve to fire up main burners.

If it's a manual gas, then you have to hold the pilot button down for awhile, in order for the sensors to tell the pilot to lite....It takes some time. Make sure that all wiring connections are tight.
Check the continuity across the hi limit terminals.
Also check the thermostat setting.

Have a fryer that i have a problem keeping lit.
Unless the fryer is running at 400 degrees or higher its that switch that is bad. That is a high limit and should not trip off unless the fryer gets close to the flash point of cooking oil which is in excess of 400 degrees for most oils. If I'm not mistaken the high limit is set to trip at 450. It's also a good idea to check the temperature of the oil when its working properly. It should run at 350 and its common to see the flames go off at about 360 and then come on again around 340 to maintain an average of 350. A bad high limit is a common problem.
