Flames coming out the exhaust
Flames coming out of the exhaust can be caused by several things.
The fryer could be set up for natural gas and it is installed on a propane system. The fryer can be leaking oil near the burner tube and the oil is burning causing excess flame. There could be grease buildup in the flue in the back of the fryer from people hanging the baskets in the wrong place.
Fyer will not shut off after reaching temp reset
Hi there.
Your thermostat may be bad, it does not cut-off on temperature setting that's why temperature continues to rise tripping the hi limit switch.Try replacing the thermostat.

When pilot is lit and
Make sure the knob on the gas valve is turned to the ON position after lighting the pilot. If the fryer won't come on....
1. The pilot flame may be weak causing low millivolts.
2. The thermostat is failing.
3. The pilot flame may be good but the pilot generator may be weak causing low millivolts.
As this unit operates on less than 1 (one) volt DC.... you can try to jump the thermostat leads on the gas valve to see if it comes on. If it does... change the thermostat.
