The video I saw showed holding power and the volume up button for many seconds before it will actually die.

You have to change the settings in your car stereo in regards to AUX volume. Set the output volume to 50% on your tab and increase it on the car stereo.Also, what is the quality and bitrate of your music?If you download 64-128kb bitrate you're going to suffer.Try ensuring the quality of your audio is either 256 or 320kbit.Alternatively instead of .mp3 try getting your music a .FLAC (No audio loss).

I put in lock on my galaxy & now all it dose is keep showing when I put password in Ice cream ads over & over & only back button shows over & over can't do nothing

You have to enable that setting I think check in the settings.

Try and do another reset and see if it changes.
