What this has to do with a guitar amplifier is beyond me, however your symptoms would indicate the bike is starved for fuel as the choke richens the mixture. Recommend a carburator cleaning and rebuild and replace the fuel filters which should be done first.

Whenever I slightly adjust the "Channel Volume"
You've got a loose wire! What's happening is that there's a bad potentiometer (the electrical component behind the knob) that's out of place and is only connecting fully at one point in the knobs circuit (the part where you get full volume) take it in to an amp tech at your local music store and they'll fix it up easily.
Ok, i love the tones
This is a tiny amp good for practice at low volume levels. You are likely overdriving it and the power amp chip goes into thermal protect. If you volume level is much louder than a small boom box, you are driving it too hard. Best to get a bigger amp.

Wonder no more, there are many others with many different brand of amps that do this. Obviously it needs repair unlless you have a problem with the cable or source you are using or have forgot to turn up the gain controls which I am sure you have checked. There are so many possibilities that there is no way we can say open it and replace this... If you get a small pop in the speaker when you turn it off, then the power portion of the amp is probably OK. A common probllem on amps that have a preamp out or power amp input jacks is a failure of the switch contacts on the crummy jacks that pass the audio through from teh preamp to the power amp...

Tha might be a cold solder joint, if you can access the Printed Circuit Board, try hitting it with the handle of a screwdriver in various zones. If you notice the problem comes and goes while doing this, then your'e close to the zone where resoldering is needed.

I can't find a schematic but there should be a circuit breaker or a fuse on the backside of the amp.

It is more likely your amp speaker is damaged.
The voice coil could be burnt or shorted, since you can hear from headphones yet it does not send the audio down to the speaker, you may want to check the speakers by removing it from the assembly, unsoldering the wires and test with a multi tester, if you dont have a multi tester, you can try using AAA bateries and attaching the positive and negative wires of the speaker to the positive and negative poles of the battery, the speaker should sound as if it is producing a scratching sound, just touch the positive repeatedly, to porduce the sound. But if this does not sound off, the speaker is dead.
if the speaker is working the amplifiers parts may have been damaged, there are a lot elements to check here, and often no service can be made by a non tech, for they are IC's, capacitor,transformers etc involved.
On clean channel when 'channel
When it is working, wiggle the channel volume control WITHOUT rotating. If the sound cuts out, likely the soldering of the pot leads is broken where it attaches to the board. Try resoldering the connections.
SOMETIMES the control is damaged in which case it must be replaced.
The Master Volume control on my Line 6 Flextone II
First try spraying a bit of CRC226 (aaaaaa9make sure it is 226 as there are other products with similar numbers there)available at Home Depot in the electrical dept. into the control where the leads go into it. You may need to bend the plastic spout of the spray can at 90 degrees near the end to get it to go up into the control. This has a high probability to solve your problem.
Getting replacement controls that exactly fit are a major headache from anyplace than the original manufacturer.

You are driving the amp too hard and the thermal protection in the amp chip is cutting out.
Either reduce the volume on this small amp or get a larger unit.
The heat sinks for the amp chip will overheat if you drive it hard and that takes a bit of time to happen, hence the 30 minute delay.
