Get yourself a copy of Nokia PC Suite. Connect your phone to your computer using a data cable (Any Mini USB data cable will do) Once your phone is detected in PC Suite, click on "Backup" and it should ask you a few questions and backup all your data.

If you got the appropriate Cable for your Phone, then the only thing you need is Nokia PC Suite for N72, Goto This Page, A Flash animation will load at the bottom of the Page, wait until it load.
Once loaded, it will show you all the Nokia Phone, just write N72 in the Quick Search box it will bring your Phone's pic, click it, then it will bring a download button, Click Download, Once downloaded, Run and Install.
When you will finish download, open Nokia PC suite, and connect your Phone, it will start detecting, and will Sync all your Contact and other thing.
When all done, do what you want, the Suite got a nice user frienly interface you will see buttons to transfer and browse your Phone.
