there is a circuit in the color section to put the tv to black and white if the color subcarrier is missing from the broadcast signal.
it is called a color killer and needs to be adjusted.

it operates off the 3.58mhz color subcarrier.
Go to the "Bose" menu screen viewing on your TV (make sure no dvd is in the player) Go to your Video controls and check your output, chances are, if your using the component output your player is set to "S-Video". There are a couple of things you could try with this. One, is to make sure that the video input is connected properly. The second would be to make sure that the DVD that played in black and white automatically changed your settings to PAL rather than NTSC.
In UK this occures when an NTSC picture is played from a DVD player to a TV which cannot enitrely hand NTSC format. Possible this will happen in the reverse for USA.
Also my TV cannot handle SVHS signals and also displays them in black and white.
Try changing settings on the DVD Player to Composite or RGB.
