Just spoke with Tanita Tech support- r5 indicates if the scale is in PC mode (able to receive data from scale). There is a button sequence to toggle between PC mode and stand-alone mode.
1. Press&Hold Zero button, then Press&Hold On/Off.
2. Release.
3. Arrow buttons toggle between PC mode and Stand-Alone, select which mode you would like.
4. Press Set button to select mode.

Yes. These systems work by what could be broken down as, "Bio-electrical Impedance Monitoring".
Meaning, they measure the amount of resistance in your body to determine the "volume %" of non-resistive materials (fat and water). Since bones and muscle are very dense in comparison, the scale can calculate the total weight of a person, then determine their "expected BF%). Fat is about 80-90% water depending on your genetic makeup, and it would only make sense that if you where full of fluids (either by ingesting large amounts or by fluid build up under the skin) that your BF% would read higher.
My professional suggestion? Use it only after waking and before any morning drink or food.

P.S. one way to test this method is to hold something heavy in your hands and watch it consider that weight Lean Muscle Tissue. Then stick your hands in a sink full of still water (moving water posses a small electrical charge that could give a false reading) and watch your BF% increase.
