Made bread on 'fruit and nut' cycle but didn't get a beep

Banana nut bread recipe: I added everything at the beginning except the banana and nuts. I set the machine for 'fruit and nut' cycle and thought I would hear a beep when it was time to open and add the banana and nuts. It didn't happen. The bread just baked without my extras. What did I do wrong?

I have made the following recipe in my West Bend machine with great results. I just got a Sunbeam 5895 at a garage sale - it works great - just wanted a different "shape" loaf! I'm going to use this recipe in my Sunbeam - don't see why it won't work!

Here's the recipe!
1/2 cup softened butter, cut into small pieces for good blending
1 cup mashed ripe banana (personal note: if my ripe bananas don't measure up to 1 cup, I add enough milk to make it 1 cup. Seems to be okay)
2 eggs, large, slightly beaten
1/2 cup chopped nuts (optional)
2 cups all purpose flour
3/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Grease inside of pan and knead bar generously with vegetable shortening (I just spray with Pan Spray). All all ingredients in order listed above to pan. Lock pan into bread machine. Program for quick bread. After a few minutes of mixing, I usually take a rubber spatula and scrape down the sides and stir in any flour that has not been completely mixed. I didn't do this once and ended up with a loaf that had flour coated corners!

When I make banana nut bread, it always falls in the middle, do I need more flour or baking time?

If you are making it in a bread maker, it's the blades that do that. Better off just mixing the ingredients then putting it in a pan in your oven.

You need to use the Quick Bread/Cake setting on your bread machine. And you may need to tweak your recipe. You can search the web using "recipe banana bread bread machine" for some additional tips.

Hi, I looked at the manual for your machine and it does not have the "beep" alert for adding fruit and nuts etc.
One of the recipes from your manual just says to add them in the beginning. Given that fact go ahead and add them be fore your last long knead.

Next time just add them with everything else. I was kind of surprised to see you don't have the beep alert for add-ins but per your manual YOU DON'T!..sorry...

Just follow the above recipe but if your using the Oster 5838 expressbake put the setting at expressbake 80min. It works flawlessly, also with the oster 5838 expressbake you don't need to use the rubber spatula to mix after a minute because it blends everything together nicely. Thanks bobert.
