The "e" usually means it has an error. it could be a bad temperature thermistor or a bad control board. the most likely is the board.
i hope you are less then 1 year old as the board can be quite pricey, about 150 bucks.
you could try to unplug the unit for a few minutes and then plug back in and see if the code goes away and returns to the cooling mode.

What can I do to get the ice cream to be frozen?

It might be a good idea to clean the condeser coil. If the coil is blocked, your freezer will not get cold enough.

How long should it take for a 18 cu ft. chest type deep freeze to get cold?

From room temperature if just plugged in rule of thumb is 24hrs to properly reach temp. Place a glass half full of water in shelf when is frozen solid the unit should be plenty cold enough to keep food. It is always a good idea to get a small fridge thermometer to make sure of temp.

Temp Alarm going off and not very cold inside.

I think you should see if the circulation fan is working inside. Sometimes they need a little push and some WD 40 let me know. I might have another idea. The Raz Shack

Not cold enough

Check the temperature setting to ensure at least the one-half way mark. If o.k., then you could have a refrigerant or compressor-related problem. Contact an appliance service company.

My wife and I bought a Kenmore chest freezer (14.8 cubic foot) about 6 weeks ago. It is made by Frigidaire for Sears, and the model number is #253.165.42105, serial # WB94341279. It has been working OK. ...

This is well with in factory specifications. Hot air rises and cold air drops. Because a chest freezer does not have a fan to circulate the air it is normal for the basket to be warmer than the bottom of the freezer. The bottom of the freezer is used for food you want to keep for a longer period of time. What you store in the basket is food you will freeze for a short period of time. Ice cream should not be kept in the basket. As you fill your freezer with food you will find that the temperature will equal out because the frozen food will take up the place of the frozen air which will give you a more stable freezer temperature.
Try your test when you have it full of food.

I need to know what the numbers mean on the temperature setting (1-7) for my Gibson Upright Freezer? What is best recommended temperature?

The highest number is the coldest setting. When you fill it up with food to freeze , set the freezer to the coldest and after everything is frozen .set the control to the middle.

Freezer not freezing food even at highest setting

If the unit is running continuously and not maintaining the temperature cold enough the system may have a leak. If it is NOT running continuously the problem could be in the temperature control.
