Hobart L800 making noise

The most likely cause is a faulty gear/gears or a faulty shift mechanism.

If you do not have experience fixing large mixers, I suggest calling in a qualified service technician.

Hobart mixers are NOT designed to change gears while operating. The Hobart planetary gears are like the transmission in your car but, without the clutch. Everytime you change gears while unit is running you are tearing up the brass spacers, gears & seals. Time to call a QUALIFIED service tech to come out & sell you another planetary or rebuild your old one, about $2K, Buy a Varimixer if you want to change gears while unit is running, they use belts. Another planetary premature failur cause, over loading the bowl. Batters & icings- 75% bowl capacity, Dough 65% bowl capacity.

Hi. You should consider a few things. They type of hook you use, can greatly affect your end result. If you're making a yeasted dough with a high protein percentage 12-13%, you should be using an "ED" hook, this is a spiral hook that has a sharp turn at the tip. You can find them on eBay for a competitive price. I believe that Hobart also sells them, but for a higher price. They are very good for mixing pizza type doughs, they also do an excellent job kneading the dough.

Have you checked the flour for lumps before it goes into the mixer? Have you tried sifting the flour?
Are you adding all the liquid and flour at once? If so try adding flour in stages to all the liquid. If you find that this solution helps you, please rate it. Good luck! ricardok45

In what speed is it slipping?You only use 1st speed for dough,right?Can you put it in gear and stop the hook from moving with your hand?Let me know.

Not sure this will help, but here are some things you might want to consider- 1st, get a new appliance technician.

2nd, if the gearbox is not making noise, then you may want to ask a COMPETENT technician to look at your mixer and check that the mixer is wired correctly for the power that you have coming into it. i.e., if you bought the mixer from a kitchen that was using high voltage (say 240v) and you have it wired into a lower voltage, then the shaft will turn, but it will seem very underpowered.

These units have the ability to run off of more than one voltage (120V, 208, 240) and multiple phases. The internal wiring needs to be wired in accordance w/ your supply voltage and phase (there is a schematic on the trans case that you will see when you remove the mixer hood that will show you the correct configuration for your application).
You should find the full wiring schematic on the underneath of the hood when you remove it.

I would also have said competent tech check the input voltage (this can be done at the main input relay) and while he's there, check the output voltage of the same relay to insure that you don't have a partial short. On the side of the relay is a 110v thermal fuse that should be tested too.

If the contactor was shorted, your shaft wouldn't turn and you would see a small green reset on the face of the contactor that would be protruding farther than normal.

Also, on the schematic, you can find the location of the fuses and it would be in your best interest to check those as well.

The bowl holds 20 quarts--are you overloading the mix?This mixer is not made for medium/heavy pizza dough.Depending on the pounds of dough,water and other ingredients will affect the mixer in some way.

Does the mixer work in any other speeds?Are you mixing pizza dough and in what speed?I service these mixers alot--i work for hobart.It sounds to me like you have a sheared key on one of the shafts.The mixer doesnt have a clutch.

sorry to hear of your misfortune,im a hobart tech and i can tell you right off the bat it would be almost impossible to tell you the solution unless i seen the mixer.be more specific about the noise and where you think its coming from,if its in the transmission i could walk you thru it but it would be a task.first thing to check is that there are no cracks on the mixer.all speeds work?1-2-3.

it sounds like the mixer was overloaded and therefore broke a shaft,gears or sheared keys.
