Renato20,Either the hook is worn or the beater shaft pin is worn or dough has built up around the pin/shaft and is stuck.I'm a hobart tech and if i came to your place,first i would use a rubber mallet and hit the outer edge of the hook upwards and see if i could free it.If that does'nt work i would heat tghe hook up with a torch and beat on it up,If that does'nt work i would cut the shaft and replace the shaft and hook.I bet if you beat on it (takes time) you will get it off.
The reason we dont use a lube is that the hook is pourous and the hook becomes contaminated.
I wish renato would have put the brake cleaner brand he used. I had the same problem and I used valucraft and brakleen brake cleaner and they didn't work for me.
Hello I work on these mixers and here's what you have to do -- I have taken off 2 different hooks stuck on 2 different mixers. Here's what to do: (1) Get a propane torch apply heat all around the dough hook -- takes about 4 minutes, then spray PB blaster down the hook opening at the very top -- if this is clogged, then take a pick or something that you can scoop out the crud, because as you heat the hook the junk will start to come up the top -- eventually the pb blaster will start to leak through the bottom and then you know you can start to take the hook off -- Make sure you use heavy leather reinforced gloves so you can be trying to loosen the hook while you are heating up the hook -- don't hold on to the hook, just once in a while try moving it up and down side to side. This will take some time, but IT WILL COME OFF! It's only food that has seized it up, but once it starts to burn the heat forces the food to separate from the hook. Apply the heat as evenly as possible and I promise you it will come off

Make sure your Beater can slip in and out of the Beater Shaft
easily. Do not force the beater onto the Shaft if the shaft is bent.
If it cannot be removed easily by hand, use a soft rubber mallet
(not a steel hammer) to slightly tap the beater so it can be moved
up and down the shaft or from side to side. Then you can easily
turn the beater left and remove it from the shaft.

To Attach Flat Beater, Wire Whip, or Dough Hook
1. Turn speed control to OFF.
2. Unplug stand mixer or disconnect power.
3. Tilt motor head back.
4. Slip beater onto beater shaft and press upward
as far as possible.
5. Turn beater to right, hooking beater over pin on shaft.
6. Plug into a grounded 3 prong outlet.
To Remove Flat Beater, Wire Whip or Dough Hook
1. Turn speed control to OFF.
2. Unplug stand mixer or disconnect power.
3. Tilt motor head back.
4. Press beater upward as far as possible and turn left.
5. Pull beater from beater shaft.

heat did not work nor did rubber mallet but what i finally did was used brake cleaner
it was able to disolve all the gunk that had built up and i came off like a breeze
i even contacted a tech who services hobarts and he did not want to touch it said the best thing was to bust the thing and buy a new hook--(i dont think he was too interested in trying to find a fix
so keep a can of brake cleaner handy
