It has a dedicated sub out. you need a phono connection on one end for the amp and the other end must have a compatable connection to your sub.

You will need a phono connection to the amp from your TV. You can utilise a scart lead that has phono outputs however a TV with audio outs (the red and white leads) is the default option.

My dad has a 7.1 home theater speaker system, and I've toyed with the STR-DE897 receiver to get all of the channels to work, but I can only get the 5.1 to work, any idea how to get the 7.1 to work?

It needs to be encoded on the media such as a DVD movie or CD - it should say 7.1 surround recorded. I'm assuming you have all seven speakers and sub-woofer hooked up, too?

I can't get the speaker B option selected on my Sony STR DH800 7.1-Channel Audio Video Receiver

If you're using the terminals for Surround Back (7.1) there is no Speaker B option.

See the notes on page 19 of the manual.

Only one speaker working on my str-de675 receiver

If the speakers themselves work fine, then the problem lies within the amplifier output. The channels can go bad after hard use, they can be repaired but it may well exceed the cost of the amp if it is not just one channel. Also be sure that you are hooking up speakers that are rated for your amplifier by matching the OHM resistance of the amplifier to compatible speakers.
