Speaking generically, in almost every case, the black and red wires are power, the white is neutral, and the green is ground. I would strongly reccommend not changing it over to a 3 wire set up. In most every case, a 3 wire set up does not include the neutral and your oven needs it.

could not find a wiring diagram specifically for the Pro Chef AH-798HL convection oven online. However, here are some general steps to follow to help you wire your oven correctly:

How to hardwire a 3 wire wall to a 4 wire oven

Simply put, it won't work. New oven=white is neutral, black and red are power but not on the same "leg", and green is ground. If you use a meter, black and red should give you 208-230 or so volts. Wires from wall=White is neutral, blank is voltage (probably 120 or so volts) and bare copper is ground. The dual voltage plug can be used for either 125 or 250 volts, not both as required by the new oven. Need an new circuit pulled and wire/breaker matched to new oven power requirements.

Hi just wondering about 240 volt.What is the black wire and what is the red one and green and yellow....Which one is L1- N- E

The black wire is Half of the 240 volts. Both the black and red wires carry 120 volts to make 240 volts. The green wire is going to be your grounding wire. The yellow wir is more than likely your neutral wire (although that goes against the electrical code). Tie in L1 to either black or red. Attach the yellow to n. I hae no idea what the E stands for. What color and how many wire are coming from the oven?

I take it the wiring harness in front of me is 3 Phase. I have a Green wire, Red, Black and White. The wiring diagram on the back is marked L1, L2, N, E. Just need to know which wire goes where thanks.

It is not 3 phase...just single phase 240V....L1 goes to the one hot side of the 240 v, l2 goes to the other hot side of the 240V, N goes to neutral, and green goes to earth ground (metal box)
so....L1=Black L2=Red N=White E=Green

Hi and welcome to FixYa, I am Kelly.

What is the model number so I can look up the installation procedures for THIS oven?

Usually for a 3 wire connection it will be connected as follows:
1 WALL black to the left terminal block terminal
The bare copper wire to the center terminal of the terminal block
2nd WALL black to the right terminal of the terminal block

If you notice in the picture it shows a black red and white connection.

Red = black for your connetion 115VAC
White = bare wire neutral Ground
Black = 2nd black for your connection 115 VAC

When the power is connected properly and using the house wires as a reference if you are
reading it with a meter you would read EITHER black wire to the bare wire = 115 - 120VAC
Reading Black to Black = 230 - 240 VAC

I have a maytag double oven cwe5100acb that has a black/white/red and a ground wire(s). Where it will be install the wires are black/white and ground. I cannot figure out what wire connects to what. Any...

black= 120 volts to ground
red =the other phase of 120 volts to ground
white=neutral
green/bare = ground
you seem to have a 120 volt wiring. you will need to change this wire to the panel from the existing, to # 6/3+ground you will need a 40 amp double pole breaker. THIS VOLTAGE/AMERAGE WILL KILL! If you are not an electician I would recomend hiring one, as, if done wrong the wiring can cause a fire or worse.

How do I connect the 3 phase / 4pin wires to the back of my defy compact stove?

You got it right,the green wire is ground.it should goto the grounding lug of the unit.
