I would like to know how to use the self timer, as it is different on this camera from any other. as well, can i set how many shots the self timer takes

Enter "setup" mode, and switch from "picture" or "video" to "panoramic". Take a picture, move the camera, and take another picture. Follow the on-screen instructions when you have finished taking the segments.
Press the MENU/SELECT button then select the wrench icon. You should then see the talking-head icon (you may have to scroll down a page or two to get there).
Turn the camera off first. To remove the memory card you have to push it down a bit, you may hear a little 'click' and as you let go the card will pop up a bit. Then you can pull it out.
This camera just doesn't allow that option. Same with my DMC-FZ20-K. As to the reason behind it, you would have to ask Panasonic's designers. There is no fault with the camera anyway. It is just the way it is.
Press cursor-left (marked with a one-handed clock) to cycle through the self-timer settings. Once the self-timer is set, start it by pressing the shutter release button.
