The doors and window system was turned on, and it woke us up in the middle of the night when no one had entered our home. We turned it off and then tried to turn it back on. A minute later the alarm went off again.

Most likely it is remembering a alarm at that station. If you enter your alarm code following the "status", it will clear it. (That's how mine works)

The system is working as designed. If you arm both doors/windows and motions, but you DON'T exit the premises during the exit delay, the system will "downgrade" its arming to doors/windows only. The assumption is that you haven't actually left the premises and are at risk of creating fale alarms. This behavior can be disabled in System Configuration (though it may require the dealer access code to do it).
Try opening and closing a sensored external door (even if you don't go outside) during the delay after arming doors+motion and see if the motions don't stay active.

temperature affects batteries. if the batteries on the window sensors have been in use for some time it is probably time to change them. Alarm batteries are only expected to last 3 to 5 years with moderate use. If you have close neighbors or live in an apartment complex then false reads could be a factor.

I am sure you already guessed this but it appears someone has changed the default installer code. Using the default installer, dealer, or master codes defeat the purpose of a security system as most criminals know the default codes. The only way I know of to regain control of this panel is to reset it to factory defaults. This does mean that you will have to completely re-progam the system. I would document as much stuff as you can from the display before resetting it. If you don't have a copy of the installation manual I am providing a link below. Hope this helps.

Push down on the tab at the top of the panel and open the front panel (Panel will say enter security code now). Put a slotted screwdriver in the top hole and depress to fold dowm the second door. Battery is inside the plastic case with two screws holding on the lid. The battery is a 6V 1.2AH battery

Does it have a backup battery and if so is the battery in good condition ? was it cold in the middle of the night ?
It does have a back up battery. It wasn't particularly cold in that room. Do batteries need changed after a period of time?
