If you are talking about the World Wide Fund, click the App Store button on your iPad's Home screen, type WWF in the Search box, then select the app you want, and follow its instructions to download and install the app.
Messenger is a Facebook product. They will regularly update it and those updates will be available and installed on your iPad. You will always receive the latest version of the app that's compatible with your iPad 2. You can try contacting Facebook, but it's unlikely they're going to support the older version of their software when there are always going to be newer (and improved?) versions available. If you can be specific about what you don't like (rather than "I hate this awful new version" which does nothing for anyone), telling Facebook about it might give them something to think about.
There ARE other nice messaging apps, including Apple's own Messages, used by millions of users successfully. You have options.
Yes. Flashing the ROM does the same thing as updating your firmware. You are simply updating your firmware to one that isn't the original. All you do is load up the file from the velocity website onto your SD card and flash and you will be back at the standard ROM. I suggest Macho ROM or JGM if you want the android market. Both run overclocked if you so choose which is much faster. JGM also has a vanilla rom (and there is and improved vanilla rom) which gives the tablet bare-bones applications if you want it to be just a reader. I would follow the method for flashing jgm. It lays out how to set up app2sd and all that. 4shared.com allows you to download apps that are not found in the market or whatever after you have rooted. Simply search the name of the app and put .apk at the end. Be careful as you can get malware from this. This method breaks copyright laws as all apps on it are offered for free and I only suggest it to download apps that are free on the market...
