I have a 754 Taylor soft serve machine and the mix freezes up on one side in the bin

I am assuming that it is the left side that is freezing up? Is there a large disparity in temperature from the left side to the right? Your machine monitors the temperature on the right side hopper and that will determine the temp of both sides. If there is a large temperature difference between the two sides then it may be that you are low on refrigerant. You may have enough refrigerant to cool the left side but not the right side and since the machine only monitors the right side, it wont shut off the mix refrigeration system which could cause the left side to freeze up.

Gearboxes definitely go bad. The first sign is usually noise, I would describe it as a rumbling. The best way to determine if it's the gear box is:
1. empty and disconnect machine from power.
2. remove the freezer door and beater assembly
2. remove the rear panel - 4 screws
3. Remove the belts on the noisy side
4. Spin the big pulley and listen for the noise, you may want to remove the belts on the quiet side to compare the two.
I have a video that was shot to help change the hex coupler, but you would follow all of the same steps to replace the gear box.

Taylor model 754-27 soft serve machine getting water and soft serve in side tray on the the side of the machine. never happened before.

It's either:

A. The drive shaft boot seal - 032560 Boot Seal - You can buy them individually or as part of the tune up kit. They are normally replaced quarterly. Inspect this part when you take the drive shaft out for cleaning. It's very important that the drive shaft comes out every time you clean the machine and that you pack lubricant between the seal and the shaft.

B. The Shell Bearing - Taylor 031324 Replacement Rear Shell Bearing This is the metal sleeve that the drive shaft goes through in the back of the freezing cylinder. They wear out over time, they usually start to "mushroom" out grind down the boot seal.

Does the taylor model 8756 put out a substantial amount more product than the 754?

Absolutely! The Taylor 754 and Taylor 794's are capable of 284 3 1/2oz. servings per side / per hour. The 8756 is capable of 426 of the same 3.5oz. servings. The 8756 packs more air into the product making it easier to freeze and reducing recovery time.

Why is my taylor 8756 - 27 freezing the chocolate side and will not dspense?

This seems like it could be many things. Is the pump coming on when you try to dispense? Can you stick a thin wire up through the feed holes in the chocolate side when you try to dispense to help free the product?

Product comes out frozen after all night on standby in a 754 taylor

The same thing happened to my Taylor 8756 and it was the thermistor probe. The probe is a thin copper tube that is near the freeze cylinder. It cost me about $20 for the part and $200 for the labor to have a technician put it in. Hope this helps and good luck.

Those are symptoms of the mix refrigeration system being undercharged. You will need a refrigeration technician to add refrigerant.

In Taylor soft serve machines when the left side hopper (standing in front of the machine) is icing up and the right side hopper is not cold enough, the problem is low refrigerant in that system. It takes R134A.
