The recipe I have is from the PWMU cookbook and includes raisins, dates, carrot, various spices and 1/2 cup of vinegar. If I use the ezy sauce instead of the spices and vinegar, do I just use the 1/2 cup?
Chutney is very forgiving, so recipes are going to be approximate. But if you want to stick to it, you'll have to guess at the volume of the raisins, dates and carrots you're not using and add that to your 1/2 of liquid. Remember that all of those veggies have a certain amount of liquid themselves, which releases when they're cooked.

You could experiment by adding them in the beginning during the very first mixing phase. Raisins are pretty tough so I hope they won't get pureed by putting them in so early but at least they won't fail to get mixed in. If they do get pureed try putting them in just before the first knead or just after it starts. It may take some experimenting to get it right.

Lack of pollination or brown rot could be the cause.They are generally not self-fruitful meaning they need a different plum and often a specific variety for pollination and fruit development. If the plums were not full size and lacked a seed (stone) this was the problem.If not try a general fungicide.
