You may have a locked up wheel bearing or you may have an object stuck in the chain. Can you spin rear wheel by hand? If not, most like bearings, if so, then you may have bent gear tooth or something stuck in chain. Check derailer to make sure it is not bent

yes it will. You will have to adjust the gear shift cable so that it doesn't go past the 6th gear on the wheel (as you would've had a 7th gear) otherwise your chain will constantly slip off the wheel and jam up

Local bike shop determined that both wheels were defective. I took the junk back to Walmart and got a refund... PROBLEM SOLVED!!

It can be repaired by using a tap and di set. If you dont want to buy one of those i would take it to a bike shop and they should be able to do it for you for around 15$

Need an owners manual for a 26” Women’s Nishiki Pueblo Mountain Bike

That bike was made from 1993-1998. It's a standard Cro-Moly (i.e. Steel) non-suspension mtn bike. In other words, there is nothing unique about it that would require an owner's manual. I might suggest you post the actual issue with the bike to get some feedback as to how to deal with it.

How do I adjust the height of handle bars on a Nishiki pueblo bike

According to the manual:

If your bike has a "threadless" stem (fig. 6) your dealer may be able to change handlebar height by moving height adjustment spacers from below the stem to above the stem, or vice versa. Otherwise, you'll have to get a stem of different length or rise. Consult your dealer. Do not attempt to do this yourself, as it requires special knowledge.

If your bike has a "quill" stem (fig. 7) you can ask your dealer to adjust the handlebar height a bit by adjusting stem height. A quill stem has an etched or stamped mark on its shaft which designates the stem's "Minimum Insertion" or "Maximum Extension". This mark must not be visible above the headset.

Making the bike from a 18-speed to a 1 speed bike

single speed bikes have a single ratchet or fixed sprocket with no offset of the spokes, so you would probable need another rear wheel.
Another derailleur is probably simpler, try ebay

Mens Titan Pathfinder Mountain Bike

If the gears will no longer go back on the bike, I would recommend buying a new wheel (including a new rear hub). It is usually easier and more cost effective to buy a wheel than to replace the hub. To replace the hub (the part that is stripped on your bike) you would also have to remove and replace spokes, etc. Search online for the wheel size you need (probably 26" - you can check the tire size) or take to a reliable bicycle shop and they will gladly help you. Anyway, you need a new hub but probably better off getting a new wheel - much easier.
