It is a Gaggaenau, the most expensive in the world. You need a service call. They don't have thermostats, they have electronic sensors which process and the information is passed on to your element :>D.
The thermal fuse is located on the back of the upper oven to get to it to replace it the oven would need to be removed from the cabinet and the back panel removed ( not fun but what must be done) here is a image of what the thermal fuse looks like.
The "File Download" box will appear when you click on the link. Choose "Save" and then save the file to an easy to remember location on your PC. When the download is complete, go to the location where you saved the file and double-click on it to open it. You can then print the manual or simply keep it on your PC for future reference.

from your description, it seems the little fuse is overheating sometimes, a short is a short and an immidiate fuse blower. i would use a higher amperage fuse, 30 amps. any electronic tech can replace this, doesnt have to be your Gaggenau guy, as it seems to me hes made a regular income of this
this oven could be in display mode this only allows non harmful functions to work eg lights etc but no heat this can be disabled through clock test prog reset but you will need an engineer to do it as complicated.
