freon and a compressor is about as easy as it gets....Loss of freon will cause erratic cooling...also if you can feel it touch the compressor after it shuts off if if feels like its really hot ....bad compressor that kicks an internal breaker....bad news then time for new one also only a airconditioner man can put freon in no 12 . but freon will stay for 50 to 80 years for i tested some old fridges and still cool fine.

The thermal fuse and the heating element would be the likely suspects. Both can be checked with an ohm meter. If there is no continuity, it indicates a defective component. Neither is repairable and if either component is bad, it will have to be replaced. Hope this helped. Good luck.

The problem usually stems with the blower motor resistor,high speed by-passes it and there-fore the controller is sending power but the resistor has gone open and the speeds can't be regulated.

This will be a water flow problem. If you have a heater by-pass it will need to be almost closed (80-90%) If the water has overheated you may need to remove the header going into the heater and replace the internal by-pass assembly.

Your question was rather confusing, but the generic answer for smoking any type of meat. poultry or fish, is 225 - 250 degrees F. Any hotter, you've gone from smoking to grilling. Smoking any type of food is "a low & slow process."
The adjustment for maintaining a certain temperature with a smoker is by opening or closing the air intake damper(s) Closing the damper(s) slows the intake air flow to the fuel and it burns slower and cooler. Opening the dampers does the opposite.
