If the temperature is exceeding 210 degrees you are at risk for overheating your truck and it shutting down is a good thing. If it is exceeding this temperature range, buy a new thermostat (very inexpensive and easy to change) located where the main radiator hose enters the engine block. This will also help keep your temps under control and if you have never changed one before on this truck, it's time to do so anyway. If the problem is happening before 210 degrees......I'm not really sure what the problem could be except that the heat coming off the engine is vaporizing the fuel before it hits the cylindars thus causeing to act like it is starving for fuel.

Hmmm. radiator was flushed and new thermostat installed about 6 months ago.
It is not "overheating" it's getting to a certain point and then shutting down.
